Don't think I'll be cooking today ... Son Nate & family are picking me up for a sojourn to Jersey, to celebrate eighteenth B'day of eldest GD..........
The unstuffed cabbage was very good. I used a 1 TBSP. scoop to make the meatballs and it worked very nicely. I always hated making rolls. Not only because it was a pain to separate the leaves but the rolls always got broken when serving. This way was easy to prep and serve and it can be eaten with a spoon.
I had corned beef sandwich - I cooked in IP, then left it to natural release and keep warm setting. It was so easy to cut paper thin after it sat for a while. It was still nice and warm. Sides were Thumann's potato salad and homemade cole slaw. I just had the slaw.
Not sure what dinner will be. I have several choice.
Cube steak or Swedish meatballs sides with either will be buttered noodles and Roasted Parmesan Crusted Cauliflower (new recipe).
OR Pot roast.
I have some apples to use. So maybe baked apples or apple crisp.
