Spelt bread

I found a mill that stone grinds whole grain flour.

After a little searching, I became enamored of Spelt flour for its nutritional profile.

So - - I ordered Spelt flour and set out to make no knead bread. I used this recipe.


I made no changes to the recipe. I did change the way I baked it.

After the first rise. After folding it a few times on the counter. Then i put parcement paper in the bowl and the bread on top of that.

After the second rise (about 2 hours), i set the oven on 450 and put my 3 qt cast iron dutch oven in the oven. Then used the parchment paper to pick up the loaf and put it in the dutch oven.

Baked 30 min cover on, reduced to 400 degrees, cover off, baked anotyerv15 min.

200 degrees - Bang on.
