Jarred Grilled Vegetables... need ideas for cooking with them!

Picked up a jar of grilled mixed vegetables...
eggplant, peppers, zucchini, artichokes, etc...

Found lots of recipes for cold pasta salads and such,
but does anyone have any other ideas for using these
in recipes?

They might be good in a scampi type dish - sauteed shrimp with a garlic butter over some type of pasta. The cold pasta salad sure sounds good.

When I make grilled veggies in the summer, I make a salad of leftover chopped veggies and Israeli couscous with champagne vinaigrette. Similar to the pasta salad, but a little different.

Here are a couple other ideas:
- chop them up, mix with some chopped cooked chicken and marinara sauce, then serve over cooked penne or rotini, or add the pasta to the rest, top with cheese and bake till bubbly.

- make a roasted vegetable galette with olives (we sub capers - not olive fans). I've made apple galette with supermarket frozen pie dough and it works great - much easier than making your own pastry dough :smile:
 
I know you're looking for other options, but boy - I often buy that kind of stuff & simply use it as a component for a fantastic antipasto platter. Along with roasted red peppers, anchovies, good salami, provolone cheese, olives, etc., etc. & served with lots of crusty bread (some slices toasted for bruschetta) & a green salad - terrific lunch or light supper.

Omelettes/frittatas?

Are they in oil? If so, you could toss them as is with hot pasta, rice, couscous, orzo.

I was thinking that they might make an interesting
panini with some dry salami style sausages I got for
Christmas and some as yet undetermined cheese.
QSis, they are in oil, I think, which gives me some ideas too!

So I made a pasta... sauteed some mushrooms, onions, sweet bell peppers,
made a sauce with some pureed fire roasted tomato, red pepper, butter
and some of the oil from the veggies. Added shrimp, then tossed some
of the jarred veggies in before serving. Topped with some basil and
Parmigiano Reggiano cheese.
It wasn't bad at all!
