8 oz fresh goat cheese,softened
4 oz cream cheese,softened
1/3 fresh minced chives,divided
8 fresh basil leaves, chopped
1 clove garlic,minced

mix goat cheese,cream cheese,2 tbl of the chives,basil and garlic with a beater or mixer until well beaten. season to taste with salt and pepper.
place a large piece of plastic wrap on a work surface. spoon cheese mixture into a 8 inch row in the center of the plastic.
roll into a log, twisting the ends around the cheese. put in fridge for at least 4 hours to firm up, or up to 2 days.
remove plastic wrap and roll the cheese in the remaining 1/4 cup chives.
*** sometimes i cut up good quality black olives and mix with cheese. the possibilities are endless depending on your taste
