I found this recipe a while ago and tweeked it a bit. I've been told by others that this is the best tabouleh they've ever had
1c. bulgar wheat (usually found in the bulk section)
2 c. chicken broth
2 c. grape tomatoes cut in half
2c. English cucumber cut in forths and chopped with seeds removed
1/2 diced red onion
1c pitted Kalamata olives (optional - I think this makes it a bit too salty)
1 1/2 c crumbled feta (I like to use the lemon oregano seasoned)
1/3 c. finely chopped mint
Dressing:
1/4 c extra virgin olive oil
2 Tbsp red wine vinegar
juice of one fresh lemon or 2 Tbsp of bottled
Salt to taste
