It might be a bit watery when you defrost it...Make sure you wrap it very well.
I won't be freezing the rice, I'm going to make new stuff each time and I may use corn meal instead of rice.I freeze jambalayas, gumbos and other dishes with rice all the time. Works fine, as far as these old taste buds can tell.
As I've mentioned before, I use the one-pint size GLAD lidded containers, which is the perfect serving size for lunches at work, etc.
I haven't made it yet, I just purchased all the ingredients today to make it in a couple of days!Not sure how you made your jambalaya...but it's supposed to be made with the rice as part of it..
