Roasted Broccoli Pesto Fettucini


1 head of Broccoli
oilive oil
kosher salt /pepper

1/4 cup warm water
approx 1/2 cup parmesan cheese
approx 1/4 cup lemon juice, more if desired
hand full of toasted walnuts
salt/pepper
drizzle olive oil to desired consistency


Cut large size Florets off of head of broccoli. Toss in roasting pan with olive oil to lightly coat, season with salt and pepper. Roast unil golden brown in a 450 degree oven. Aprox 15 minutes.

Meanwhile cook fettucini according to package,as well as toast walnuts in oven or in a dry fry pan until lightly toasted.


When broccoli is done, tranfer to blender or food processor. Add in remaining ingredients except olive oil and fettucini. Puree a few seconds to get it moving then drizzle in olive oil slowly until desired consistency. Add more lemon juice if desired as well until desired consistency.

Toss gently with drained cooked pasta.

It was pretty good, but I am a basil pesto megga fan so that is still my prefference!

That's a nice twist! I'm always looking for something different. Looks great too! I love those chicken tenders, so easy to thaw and cook, can't beat 'em!

Yeah I love that they cook so quickly as well thats actually why I got them this week! lol
They are great for salads!
