Mushroom Goat Cheese Omelet

Ingredients

2T butter
6 sliced mushrooms
2T herbed goat cheese
3 eggs
S&P

Method

Melt butter in omelet pan. Add mushrooms and saute 5 mintues. Meanwhile whip eggs till light and fluffy. Add to pan. Let sit over medium heat for a minutes. Gently lift edges to let egg run under that which has already set. Continue to do this around the pan till almost all liquid egg is set. Flip the omelet. Add the goat cheese down the middle. Let sit over medium heat about 30 seconds. Transfer to plate, forcing a fold as you do so.
