Perunarieskat - Potato flatbread

This one of the most traditional way to make the bread in Finland. Other version is even more simple: water, salt and flour mix together and bake on a flat stone above the campfire. This recipe I have added some mashed potatoes too.

2 1/2 dl (1 cup) mashed potatoes (with 1 to 2 tablespoon butter if you desire)
1/2 teaspoon salt
1 egg
1 dl (0.42 cup) all-purpose flour
1 1/2 dl (2/3 cup) barley flour

1. Preheat the oven to 250 degrees C / 482 degrees F.
2. Stir the cooled mashed potatoes with the salt, egg and flour.
3. Lift the dough into two heap baking sheet baking tray and tap them into 1 cm thick loaves of bread.
4. Prick with a fork and bake in the oven in the median plane 18 to 20 minutes.
5. Eat hot with the butter.

Oooo, that looks do-able, Saliha! Love the fact that it doesn't require yeast!

Assuming I can find barley flour, I'm going to give this a try!
