I want to make this, and have everything but rum extract. Can I use rum and be okay?

Fallon's Eggnog Bread

Ingredients:

2 eggs
1 cup sugar
1 cup dairy eggnog
1/2 cup butter, melted
1/4 tsp. nutmeg
2 tsp. rum extract
1 tsp. vanilla
2 1/4 cups flour
2 tsp. baking powder


Directions:

Preheat oven to 350 degrees
Grease bottom of loaf pan
Beat eggs, add sugar, eggnog, butter, rum flavoring and vanilla
Blend well, add flour, baking powder and nutmeg
Stir until just moistened
Pour into greased pan
Bake for 45 to 50 minutes or until toothpick comes out clean
Cool 10 minutes
Remove from Pan and place on wire rack to cool

Serve warm with lots of butter. This is simply to die for! Enjoy

It won't hurt to use it, but it won't have nearly as much flavor. Extracts have much more highly concentrated flavor than straight liquors do.

I might try to reduce some rum in a small pot and use the resulting syrup.

I made a couple of loaves of this today - easy and delicious!

I tried a slice, warm, with butter ..... YUM! I am going to toast my next slice in the toaster oven.

It's soft, almost like cake, but not too sweet. A cross between bread and cake.

I found a little rum extract in my larder, so for each loaf, I used 1 Teas. of rum extract and 2 T. rum (I looked up the conversion). I think next time I will take Leni's advice and use more rum extract.

Sprinkled some freshly grated nutmeg on top before baking.

It took an hour and 10 minutes in a 350 oven to fully bake 2 loaves.

I brought a warm slice to my aunt in the nursing home this afternoon, and she LOVED it with her coffee!

Lee - That is wonderful bread - and yours looks soooooooo good. Fallon made a bunch of it to take to my Dad's house on Christmas Eve and as gifts for my brothers and their families. It doesn't last long, I can tell you. So glad you've enjoyed it.

Merry Christmas to you and to everyone on NCT. Hope it's a merry one and a wonderful New Year. This time next year we hope to be in Ireland with family.
