Well what I'll be eating depends on if I feel better and my tummy.

I have the ingredients for Salade Nicoise. I also have a chuck roast and ground beef.

I had pastina in chicken bouillon and saltines for breakfast.

I had chicken bouillon and saltines for lunch.
Tummy feeling a bit better at the moment so the Salade Nicoise is on the menu for now. We'll see later.

Craig did a low and slow smoke on the Big Green Egg of a pork butt. He used sub rolls and had a sammie. I went breadless. Loaded tater skins as a side.

We bought 4 Hormel butts today at WinCo... they were about $3.50 each! :readytoeat:

Tonight it's bloody mary's with olives and drunken string beans.

I am planning chicken fettuccine (or another pasta) alfredo for dinner.
I'll add peas too even though the grandkids don't like them.
They can eat around them lol

My grandmother got my brother to eat peas (frozen, not canned) when he was little by putting a ton of butter and a little salt on them. He loved them so much that he'd rather have a second helping of peas than dessert!

They like sweet potatoes, white potatoes, corn and oddly enough spinach lol
The older one is a lot more picky.
To the point of being maddening.
Perhaps I'll go pealess!

The big Freezer is practically empty, but on purpose... It is an old one, and needs defrosting........ Then, we can stock up and get away from the burgers, brats, etc. that we've been living on for a while .....

Last Night's burger with mushrooms under onion gravy, Tots, Frenchy Beans with Bacon...

I'm planning on making a chuck roast (pot roast style) with baby bella mushrooms tonight in the IP. Not sure if I will go with mashed potatoes and steamed carrots cooked on the stove/micro or do them stew style in the pot.

Bibimbap. You can't really see it but there is ground beef under all those veges and egg in the bowl. Bibimbap sauce made with gochujang on the side, so it can be as spicy as youwant. Soju as a beverage.

Plenty of leftovers in the fridge and freezer.
So that for dinner.
Lunch, I may go with a friend to Sweetwater Chophouse.

We decided to have a repeat of last nights salad.

Didn't get a picture of the salad but I did get a picture of dessert.
Pineapple, nectarine, grapes and strawberries, splash of lemon juice and a drizzle of honey.

Craig was over on the west coast for work, so he picked up some stone crabs for us. This will be it for us for this season, which closes the 15th. Mustard sauce of course and just a plain salad we ate prior.

It has rice as a base, but obviously you can use the amount you want or none at all. The recipes I use are from https://mykoreankitchen.com/bibimbap-korean-mixed-rice-with-meat-and-assorted-vegetables/ but I use around a pound of 90/10 ground beef and only triple the other ingredients for the beef. I do make more of the veges to go along with the more beef too. I also triple the bibimbap sauce since Craig likes things spicy. This is a favorite for us.

You could also use glass (cellophane) noodles. We've used them in place of rice and udon noodles

DIL is starting the Keto diet today, so this is going to make things very interesting for meal plans.
I thought about going back to eating vegetarian or more plant based, heavy on good everything.
Might be better for all of us in the long run, tho I certainly do not need to lose weight.

So far I've had Kashi cinnamon mini wheats w/ almond milk for breakfast.
I'm snacking lunchwise, sliced cukes, Colby cheese chunks and cashews.
Dinner will either be what DIL makes for herself and my son, or I'll have something Boca/Quorn or Lightlife.
I found some little crustless quiches too.

I went shopping this morning.
We had rotisserie chicken and fruit for lunch.
For dinner I had a small appy plate (strawberries, nectarine, pineapple, 1/2 hard boiled egg, Kalamata olives, 4 anchovy fillets, 2 prosciutto wrapped mozzarella, 2 genoa salami wrapped mozzarella and saltines). Then I had a cup of chicken bouillon with shredded rotisserie chicken in it.

Longggg time ago I posted a recipe similar.
I think Lee made it.
Poached egg over ramen/soba w/ bok choy and carrot.
It's supposed to have parsley, but I used dried chives.
Dinnah in 5 minutes.
