Dinner tonight is going to be roast in the bag and loaded mashed potatoes. Found the recipe on Yummly.
Hopefully peas or something to green it up.

I'm doing meatless Friday's for Lent so there will be fish and something vegetarian. I may bake a salmon fillet.

I'm at the point where I don't always adhere to meatless Lenten Fridays.
God isn't going to send a bolt of lightning toward my skull for enjoying meat.:rolleyes: lol

I'll probably do peas or something with the dinner or asparagus.

Used a McCormick Bag n Season for the pot roast, loaded mashed potatoes ..and peas.
The juices leftover in the bag made a wonderful gravy.
Everyone loved this!

Due to technical difficulties I couldn't bake salmon tonight. The mrs made a meatloaf using the leftover spices from last night and it was pretty good. The potatoes were to be dipped in paleo ranch dressing which didn't taste all that good, and the carrot salad was like what we used to get in high school cafeteria and excellent.

This afternoon I baked cookies for a funeral tomorrow and had two cookies for dessert.

Tonight my son and daughter in law had to put down their 18 year old cat, Sophia. . :sad:

Today we're going to a Home and Garden show at the college campus.
There they have food vendors, so probably something there for lunch.
Dinner is going to be taco salad.

First time I made them. Even made the ricotta since we didn't have any. I had to come up with something for dinner last night because Craig was going to pick something up but got caught up in work, and by the time he knew that too late to pull something from the freezer. I've wanted to make these for a long time and we had all the ingredients so... I'll post a tutorial tomorrow as I entered them in a contest and had to take pics and write the recipe.

Lunch was shredded chicken sandwiches and hot drinks at the h/g show.
I've got the table ready for a do it yourself taco salad night.
A friend is here whom my kids and grandkids adore.
They say she's crazier than I am. Lol

Yesterday was Mac n cheese with tuna.
Tonight Salisbury steak, steamed thin asparagus (topped with butter and grated parm reg/pecorino Romano cheeses), mashed potatoes and onion gravy.

Salisbury steak, steamed thin asparagus (topped with butter and fresh grated parm reg/pecorino Romano cheeses), mashed potatoes and onion gravy (got a little to thick but was wonderful).
