this is both a recipe and a tutorial on how i do my special occasion omlets
you can use any ingredients as far as the "fillings" go
2 x-large eggs, separated
smoked salmon - no set amount
clarified butter
fresh green onions
black pepper
cheese
spices (your taste determines this)
optional ingredients:
asparagus
bacon
ham
(pictures are not mine but they are all generic anyways)
separate the eggwhites and beat until frothy or meringue like
preheat broiler of stove
beat your egg yolks slightly in a different bowl, add spices
then fold in your egg whites to the yolk mixture being careful not to take to much air away from the egg whites
turn your skillet on to high on your stove. i use a cast iron pan for my omlets because i can put them into the oven as well.
when pan is hot, place some clarified butter into the skillet.(i turn down my pan because it is hot)
pour mixture into pan and do not touch
it will look similar to this but will not be as dry on top
as soon as it starts to firm up a little, lay in your favorite fillings..smoked salmon is my favorite, i also put in smoked gouda and blanched asparagus.
place under broiler and cook until cheese is melted.. when finished, slide onto a warm plate and gently fold over..this is what it should look like but a little more fluffy
