Sloppy Jose Bake
Makes 10 Servings
2 lb. Ground beef
2 cups chopped onion
1 cups chopped red and yellow bell peppers
1/2 cup green chili’s, trimmed, chopped, with seeds (I use 1 cup-LT)
1 can (15 oz.) tomato sauce
3 cans (15 oz) petite diced tomatoes w/ green chilies, drained
1 cup ketchup
1/2 cup packed brown sugar
2 tbl. Yellow mustard
2 tbl chili sauce (or a little more) (I use Sriracha)
1/3 cup Taco seasoning (I use McCormick’s)
1 tsp white pepper
3 jalapenos, cut into ringlets (Optional)
1 ½ cups BISQUICK
1 cup milk
2 eggs
2 Tbsp. sesame seed, if desired
(for a thicker crust, adjust this recipe upward)
Heat oven to 400°F. Cook ground beef in large skillet until beef is brown; drain well. Soften onions and peppers and return beef to skillet with onion mixture
Stir in Taco Seasoning
Stir in tomatoes, sauce, ketchup, brown sugar, spices and mustard. Heat to
boiling. Spoon into ungreased 13 x 9 x 2-inch pan.
Stir baking mix, milk and eggs with fork until
blended. Carefully pour over beef mixture. Sprinkle
with sesame seed. (optional)
Bake 20 to 25 minutes or until light golden brown.
