-or as close as we could come up with-

2 c pre-cooked cold rice
1/2 c chopped sweet onion
1/2 c chopped red, yellow and green bell pepper
1/2 lb bacon-cut into pieces
1-2 beaten eggs
2 generous pinches of brown sugar
1 clove minced garlic
soy sauce

green onion to garnish
--------------------------------------
Fry bacon first in a wok or heavy skillet until it's about half way done --do not drain the bacon grease.
Push bacon to one side and add onions, peppers and garlic. Saute until they begin to soften a bit.
Add brown sugar and continue to stir until it dissolves, then add rice and sautee for a few minutes, then finally the beaten egg(s).
Stir til eggs are cooked and mixture is heated through. Add dashes of soy sauce and taste to test as you go.

Garnish with green onions

This sounds really good. I've copy pasted and will try it soon. It's a great way to use leftover rice. Thanks for posting it.

Sounds great. I just wanted to clarify - is it 1/2 cup each of red, yellow and green peppers, or 1/2 cup altogether? Thanks.

thanks for the welcome, this looks familiar to another forum I go to sometimes, maybe with some of the same people judging by the names. Hope to keep up.
