For anyone interested I have found two more versions (see the links bellow).

My version:

2 Tablespoons sugar
2 tablespoons butter
1/2 cup warm milk
1/4 teaspoon vanilla
pinch of salt
2 eggs
1 teaspoon dry yeast
2 cups flour

Make a dough easy to handle. The dough should be not too hard but not too soft either. Help with a little liquid or flour if necessary.
Cover the dough and let rise 1 - 1/2 hours in a warm place.
Pat the dough down with your hands and then roll to 1/2 inch thick.
Cut into circles, cover and let rise for 30 minutes or until double in size.
Fry in preheated oil until golden brown on each side.
After cooling fill with cream or fruit preserves.

Enjoy!

Quick note:
To be sure the frying oil is ready... dip the handle of a wooden spoon in it... if it sizzle then the oil is ready.

oh man what I like to have some of those! I could just see some raspberry filling pump in coded in powdered sugar. Oh my or one of my favorite lemon filling Yum Yum Yum.

Man, these bring back memories! When I lived and worked in Detroit, there was always a co-worker who went to Hamtramck (often referred to as Poletown) early in the AM on Shrove Tuesday and brought in paczki to work. (For those unfamiliar, it's pronounced 'poonch-ski')

The next day everyone came in with ashes on their foreheads. I think that was pennance for eating all those jelly doughnuts.

Those do look good.
Around here we get them at a place called Pat's that has been in business for years.
My favourite is the custard filled kind, or the ones with a little apple filling plopped atop the custard.
Our grocery store has them shipped in just for Fat Tuesday in boxes of 4, but they don't taste anything like Pat's.

I like them filled with vanilla pastry cream and apricot jam... the way my grandma used to make them.

They are not hard to make at all... just need a bit of love and patience.

Easier said than done, right? :whistling:

Not really.
I have a friend on another cooking forum who is Polish.
She never fills hers with anything at all and the recipe is a snap.
