Peep's Herb Roasted Cornish Game Hens
2 (≈2 lb.) Cornish game hens
4 TBSP. butter, softened
Herbs:
1 tsp. dry parsley
1 tsp. dry rosemary
1 tsp. dry thyme
1 tsp. dry sage
1 tsp. poultry seasoning
2 cloves garlic, minced fine or pressed
1 tsp. lemon juice
1/2 tsp. lemon zest
1 1/4 tsp. coarse salt, plus more for sprinkling
1/4 tsp. freshly ground black pepper
Blend all herbs with soft butter.
Gently loosen skin on the breasts of the hens.
Divide herb butter - Place 1/2 under skin and 1/2 on top of skin
Preheat oven to 400°F. (I used Convection Roast 400°F)
Place hens on a rack inside a baking pan.
Roast 55 - 60 minutes (rotating pan after 30 minutes) until golden brown.
Check internal temperature for doneness (165°F)
Remove from oven and let stand at 15 minutes before serving.
