How about a little Island Grillin? Jerk Chicken, Rice and Beans, Braised Kale?

My cousin Tom has joined the Grillin Fools team. He and his Big Green Egg. That thing is a marvel of modern engineering. He did Jerk Chicken over the weekend as well as a couple of sides indoors that went along nicely with the theme (Rice and beans, braised Kale) as well as pretty kicked up dessert. I have the recipe for the dessert up but am waiting on the pics...

So that was BBQ'd? The color is great. My Q'd chicken doesn't get a nice crust like that, but I've only tried smoking it once.

Not BBQ sauce. That is the Jerk Marinade. That stuff is incredible if done right. Done wrong and you will light your butt on fire the next day like you have never experienced.
