Sausage Dressing (Stuffing)

I have tried so many low carb stuffing recipes, but none of them came anywhere near the real thing until now.

When making low carb stuffing, starting out with bread that is already baked as you do with traditional stuffing, usually results in total failure. In this recipe the bread starts out as a batter. This is a fabulous recipe, tastes so good.

Low Carb Sausage Dressing (Stuffing)

1 tablespoon rubbed sage OR 1 1/8 teaspoon ground sage
3/4 cup almond flour
1/4 cup plus 2 tablespoons (1/2 ounce) pork rind flour

1 teaspoon baking soda
1/8 teaspoon baking powder
1 pound bulk pork sausage (sage flavor works best)
6 tablespoons butter
1/2 cup onion, chopped
3/4 cup celery, chopped
2 eggs
1/2 cup water
1/2 teaspoon chicken bouillon powder

In a small bowl, stir together the sage, flours, baking soda and baking powder. Set aside. Grease an 8" square pan.

Brown the sausage, remove from skillet. Add the butter, onion and celery. Preheat oven to 350 degrees. Cook the onion and celery until it is done the way you like it. Remove from heat.

In a small bowl, use a fork to beat the eggs, water and bouillon together. Stir in 1/2 of the dry ingredients until well blended, then stir in the remaining dry ingredients. Stir 1/2 of this mixture into the skillet, then stir in the other half of the mixture. Stir in the sausage.

Spread into the pan and bake 25 minutes or until lightly browned.
