1 T vegetable oil
1 small chopped onion
1/2 c sliced mushrooms
1/2 green bell pepper, sliced thin
1 c crushed tomatoes (with juice)
1 c beef stock
1 c thin sliced pepperoni
1/2 t dried basil
1 c shredded mozzarella
Stir fry onion, mushrooms and pepper in oil over medium heat til soft.
Add tomatoes, beef stock, pepperoni and basil.
Cook til heated.
Ladel soup into ovenproof bowls and sprinkle with the mozzarella, then broil in oven til cheese melts.
