Chunky Cheese Soup

2 cups water
2 cups diced peeled potatoes
1/2 cup diced carrots
1/2 cup diced celery
1/4 cup diced onion
salt and pepper
1/4 cup butter
1/4 cup a-p flour
2 cups milk
2 cups shredded cheddar cheese

In a large saucepan, combine water, potatoes, carrots, celery, onion and salt and pepper. Bring to a boil, reduce, cover and simmer til veggies are tender.

In another saucepan, melt butter and stir in flour until smooth. Slowly add milk. Bring to a boil and cook and stir for 2-3 minutes until it thickens. Stir in the cheese until melted. Add to the soup. Stir to combine.

You can also add cubed ham, cooked ground meat, cooked and crumbled bacon, etc.
