Crispy Chicken Salad with Honey Jalapeno Vinaigrette

- Makes 1 serving -

Ingredients

4 oz. chicken breast, raw
1 oz. seasoning flour
3 oz. spinach leaves, cleaned
0.5 oz. bacon, cooked, crumbled
2.5 oz. tomato wedges
1 oz. Monterey Jack cheese, shredded
3 oz. Honey Jalapeno Vinaigrette
Egg wash, to coat
Directions

Flatten chicken breast to uniform thickness; coat with egg wash. Press both sides of chicken firmly in Seasoning Flour. Deep fry or sauté on both sides until cooked. Julienne breast. Place spinach on a 10" plate, then top with chicken, bacon, and tomato. Top with cheese and serve with Honey Jalapeno Vinaigrette.


Honey Jalapeno Vinaigrette

- Makes 1-1/4 cups -

Ingredients

5 oz. Orange Blossom honey
2 oz. lime juice, fresh
2 oz. white vinegar
0.66 oz. canola oil
0.6 oz. tomato, diced
0.16 oz. jalapeno pepper, diced
0.07 oz. garlic, fresh, diced
0.06 oz. cilantro, fresh, chopped
0.06 oz. salt
0.012 oz. black pepper
Directions

Mix all ingredients in a blender until emulsified.
