A different way to make chicken or turkey croquettes?

My MIL was stewing yesterday, wishing she had a recipe for turkey croquettes that didn't require them to be deep-fat-fried, as she is always at war with her diabetic condition and can't eat things like that. She wondered if it was possible to bake them - and I have absolutely no idea, as I've never attempted them. Does anyone possibly have any ideas (or even better yet, a recipe) for these morsels that could help us out with this project? Any and all help very gratefully appreciated.

DW's mom went online and picked up this recipe for Baked Turkey Croquettes from the site that Chilefarmer sent me - we ate over there for lunch today and these are absolutely wonderful!! She served them with an herb gravy and a light veggie casserole and it was out of this world! Try the croquettes!
