Default My take on Chile

My Chile
1 Onion- (chopped)
1 bell pepper- (chopped)
4 clove of garlic- (chopped)
1lb-cubed venison or Lamb or stew beef [using half lamb and half beef works well, but venision is best.]
˝ lb ground beef
Teaspoon rosemary
1 Tablespoon Adobo [Spanish all purpose seasoning]
4 or 5 heaping Tablespoon chili powder
2 Tablespoon paprika
1 Tablespoon cumin
1 bottle of beer 2 bottles if you like it watery
2 can “rotel’ tomato with chilies
4 cans of “Bush” chili beans.
Salt & pepper to taste
4 Tablespoon of oil

In frying pan add 3 Tablespoon of oil. Brown meat with rosemary , and then drain meat.
In frying pan add 1 Tablespoon of oil sauté Onion, bell pepper, garlic. When the onion is clear add bottle of beer. Let boil. Now add meat and all spices, stir then add rotel tomato with chilies & chili beans. Cover and let simmer on low heat or crock-pot for about 3 or 4 hours. “It’s better the next day.” And if you’re not a wimp or a child, you can sauté jalapeno peppers with the Onion, bell pepper, and garlic

I like the sound of your take, Rustpot. Rotel instead of cayenne or other chili powder is interesting, as is the addition of Bush's Chili Beans.

This will have to go on my bucket list!

Currently on the look out for a good chili recipe...and this sounds mighty tasty. Might just give it a whirl before the weather gets too warm.

We're having Cincinnati style chili this evening. 5-way is my favorite. On top of the spaghetti in the following order: kidney beans, chopped onion, chili and shredded cheddar cheese.

Cincinnati Style Chili
Recipe
Chili
Category
Servings
* 2 lbs ground beef
* 2 cups chopped onions
* 4 cups beef stock
* 2 (8 ounce) cans tomato sauce
* 2 -3 tablespoons chili powder
* 2 tablespoons apple cider vinegar
* 2 teaspoons Worcestershire sauce
* 1/2 ounce gratedunsweetened chocolate or 2 3/4
tablespoons cocoa
* 2 teaspoons instant minced garlic
* 1 teaspoon ground cinnamon
* 1 teaspoon ground cumin
* 1/2 teaspoon salt
* 1/2 teaspoon ground red pepper or 1/2
teaspoon cayenne pepper
* 1/4 teaspoon ground allspice
* 1/4 teaspoon ground cloves
* 1 bay leaves or 1/8 teaspoon bay leaf powder
1. Brown ground beef and onion.
2. Drain.
3. Add beef stock to beef mixture and simmer 10 minutes.
4. Add remaining 13 ingredients, simmer uncovered 1 hour.
5. Remove bay leaf, skim off extra fat.
6. Serve over hot spaghetti, or hot dogs in buns for chili dogs.
7. Top with plenty of cheese and other optional toppings.

This is my favorite recipe for chile. A variation of a recipe that has been around for years with many variations. Seasoning may be adjusted to taste, suggestions below will result in a spicy but not too hot flavor. A recipe that is easily halved or doubled with no ill effects.

2 pounds cubed lean beef or venison
1 pound sweet or medium Italian sausage cut into 3/4 inch pieces
About 1/2 pound lean bacon
garlic to taste. I use around half a head, crushed
1 large can Italian or other high quality tomatoes
1 large bell pepper, coarsely diced
1 bottle good beer.
2 or three tbs chili powder or to taste
2 or 3 tbs dried crushed red chili peppers
Oregano, 2 tsp
1 large onion, diced,]
1 or two pickled jalapeno peppers. Again to taste. I start with one, add more if necessary.

3 cans pinto beans.

Fry bacon, brown beef and sausage in drippings.
Saute onions and bell peppers lightly.
Add all ingredients except beans to large pot and simmer one hour. Adjust liquid. Add pinto beans. Simmer 1/2 hour longer. You may adjust seasonings 15 minutes in.
I serve with shredded cheddar and jalapenos on side. Along with flour tortillas

Dang Big Jim, that sounds Awesome!!!!! I HAVE to try this for sure!!!!!!!

I love Cincinnati Chili. When we visit Columbus Oh, or Cincinnati I will always try to squeeze in a visit to SkyLine Chili. Mmmmmmmm so good. Thanks for the home made version Mr. Green Jeans.
