I love adding candied walnuts to salads but in the quantity I need them they just aren't available.
You've got to keep an eye on this project because it can get away from you quickly...that and the fact that a boiling sugar burn is about the nastiest burn you can get.
Put 2 c of sugar into a heavy saute pan, heat on medium high. Swirl it around as it melts and turns amber. As it turns a caramel almost cinnamon colour, add chopped walnuts (or any nut you prefer), tossing to coat.
Turn it out onto a pan covered in greased wax paper to cool. Chop them up and store in an airtight container.
I add orange zest to mine. mm mm mmm mmmmm mm.
