Bacon Wild Rice

1 tablespoon butter
1 cup uncooked wild rice
1 1/2 cups sliced fresh mushrooms
2 medium green onions, thinly sliced
2 1/2 cups water
1/2 teaspoon salt
1/4 teaspoon pepper
bacon bits, fried bacon, vegetarian bacon alternative

1.Melt butter in 10-inch nonstick skillet over medium heat. Cook wild rice, mushrooms and onions in butter about 3 minutes, stirring occasionally, until onions are tender.
2.Stir in water, salt and pepper. Heat to boiling, stirring occasionally; reduce heat.
3.Cover and simmer 40 to 50 minutes or until rice is tender; drain if necessary. Stir in bacon.

Could I add 1/2 c wild rice and 1/2 c brown rice??

thats how my mom does it... we find when using wild rice well its a little too much wild..lol

oh and very good recipe Sass

I agree - I like to combine the two if it works in the recipe. Do you think more liquid would need to be added?

when it comes to wild rice, we(canada) have huge amounts of it..they call it indian rice here....thats just what it is called..lol
