Your house will smell so good while this is baking. My son cant get enough of this gravy, he loves the gravy served over the pork. I have made this in my Dutch oven many times.

ROASTED PORK LOIN

3 pound(s) PORK LOIN ROAST
1/4 teaspoon(s) THYME; Dried.
1/2 teaspoon(s) MARJORAM; Dried.
1/2 teaspoon(s) GARLIC POWDER
1/2 teaspoon(s) SAGE; Leaves, Dried.
1/4 teaspoon(s) SALT
1/8 teaspoon(s) BLACK PEPPER
2/3 cup(s) BREAD CRUMBS; Dry.
1 small ONION; Cut Into Slices.

In a bowl mix together all the spices and the bread crumbs.
Place pork on a sheet of wax paper and coat pork well with the seasoned crumbs.
Place sliced onions in center of roasting pan and place pork on top of onions.
Roast uncovered at 325 degrees for 1 hour and 45 minutes or until pork is done.
Make gravy by adding some water to pan and scraping up onions from bottom of pan.
Thicken with flour or cornstarch and season to taste.

Another winning recipe of Ol' Blue's!

I used all the herbs listed, but fresh ones from my garden, plus a little rosemary, and I used a probe thermometer to take the pork to 142, then let it rest. It did take about an hour and a half for 2 1/2 lb roast.

Easy, delicious and easy clean-up, too!

I'm doing a roast of pork loin in the Czech style - roasted with caraway seed and fresh sage leaves from my bushes.

I got this loin at Costco the other day - they were handing out $8 off coupons as we came in the door and didn't think much about it. When we got to the bin we couldn't pass it up. They were $16 each so paid 8 bucks for this loin. I'll cut off a roast and freeze the rest today.

Oh, John, THANK YOU for bumping this up!

I was considering an easy pork loin recipe and Ol' Blue's was wonderful. She had excellent recipes and I still miss her.

Please post your recipe and photos! Great deal on that loin!

OK, this is what I do... salt the fat side up, sprinkle with caraway seed, and top with sage leaves. I roasted covered for 45 minutes, took the lid off and gave it another half hour uncovered. (350* F) It got a little over done and was a bit dry. The next one will be in the crock pot. It still tasted good.

now hear this . . . standby for heavy waves and heresy . . .

low and slow roasting makes for delicious stuff - and I'm still not dead from food poisoning.

chicken/poultry fat will render out nicely at 155'F
beef and pork fat needs about 175'F

takes longer. tastes better.

With all due respect to heretics :respect: , I prefer pork loin, tenderloin, and loin chops at 140 degrees.

I like the caraway and sage seasoning idea, John.

Have you ever fried some of your sage leaves in brown butter? Better than potato chips!

Made Ol-blue's again, but used Bell's Poultry seasoning this time. Cooked a bit too long for my liking.

Also, I put mushrooms on the bottom along with the onions - I prefer it without.

I took the last of the dry pork roast and put it on the cookie sheet with the bacon bake for breakfast a few days ago - it was much better.
