Elderberries

So, my elderberries are beginning to ripen; I took about a kilo off today and that's just a little tease, there will be lots more.

What do I do with them aside from mixing with other berries for preserves?

We don't have them here in the NW. Growing up in Iowa, my folks made elderberry jelly and not mixed with anything else. You could can the juice for making sauces to serve with meat, deglazing, etc. My father also made elderberry and elderflower wine.

You can freeze them for future use. I do that with my boysenberries. Just put a single layer of them on a cookie sheet. Once they are frozen put them into a Ziploc. Later you can take out just what you need.
