Spanish Rice with Ground Beef

1 cup basmati rice
1 lb lean ground beef
1 small onion, chopped
1 10 oz. can Rotel diced tomatoes
1 8 oz. can tomato sauce
1 cup of water



Brown the lean ground beef and onion in a large skillet over medium heat. Add the rice and stir. Add the tomatoes, tomato sauce and water. Mix well. Cover and bring to a boil. Do not remove the lid. Turn heat to low and simmer, still covered, for 20 minutes until rice is tender.


Cool completely and transfer to a freezer safe bag or container. Will stay good frozen for 2 to 3 months.


Defrost in the refrigerator for 24 hours before serving or remove from freezer bag and defrost in the microwave. Reheating can be done in either the microwave or on the stovetop.
