1-1/2 c cubed ham
1 T olive oil
1 c chopped onion
3/4 c chopped green pepper
1 t minced garlic
1 14 oz can stewed tomatoes
1 14-oz can chicken broth
1 t cajun seasoning
11/2 c quick rice
Heat oil in a large saucepan on medium heat.
Cook onion, pepper and garlic in oil about 5 minutes.
Stir in undrained stewed tomatoes, chicken broth,ham and cajun spice.
Bring to boil reduce and simmer 5 minutes, uncovered.
Stir in the rice and remove from heat.
Cover and allow to sit 5 minutes.
