One of my favorite things to do with leftover steak or roast beef is to make hash using the Joy of Cooking recipe. Here is last night's offering. I used fillet mignon, yellow potatoes, yellow onions, bacon grease, and fresh ground black pepper and marjoram. I cooked the potatoes in the early afternoon, then threw it together in the evening. Some put catchup on it but I like to use our home made chili sauce.

This was a huge batch and used the CI chicken fryer.

Last night's din... eggs over easy, hash, and bacon.
The darker bacon was bacon that came off the fillet
mignon and had been grilled :weber: so was much
darker than the pan fried.

Thanks Lee. I've been making it so long I don't even look at the recipe. I used a lot of poatoes last night because I wanted to use them up. I had the leftovers for breakfast.
