Default Tortilla Española

We had this for dinner last night.
My wife made it and used the wrong
pan so it didn't get flipped but came out
wonderful. It was more like a frittata.

We made it vegetarian since Peter was here but one can add bacon or ham.

I don't know if it's the same elsewhere, but around here, we have a sub shop about every 20 feet. And on most menus is a Potato and Egg sub.

Evidently a popular flavor combo, but not something I grew up with.

I imagine with the right seasonings, I'd love it.
