Creamy Cucumbers

2 cucumbers large, peeled and sliced
1 teaspoon salt
2 tablespoons red onions chopped
1/2 cup sour cream
2 teaspoons lemon juice
1 1/2 teaspoons dill weed chopped fresh or 1/2 teaspoon dried dill weed
1/4 teaspoon sugar
1/8 teaspoon black pepper

Place cucumbers in a medium bowl; sprinkle with salt. Cover and chill at least 30 minutes. Drain liquid. Stir in onion.

Meanwhile, stir together sour cream, lemon juice, dill, sugar, and pepper. Stir into cucumbers. Taste for additional salt.

Looks good Sassy! I sure wish cucumbers did not give me such horrible heart burn. Still sometimes I can't help myself and will eat them. This would be one of those dishes that I would try heartburn or no. :thumb: :D

Sass, my Polish aunts used vinegar instead of lemon juice, and fresh dill always!

One of my all-time favorite summer salads/side dishes!

Oooh Sass-my mom used to make a cucumber dish very similar to this. Of course, it was one of those she made from memory, so there is no "recipe" to speak of. Until now!! Thanks !!
