Kind of a dank day on NJ. decided that we needed Chili.
Great Chili
3/4# Sweet Italian sausage
3/4# Hot Italian sausage
1 Can Black beans (15.5 oz)
1 Can White beans (15.5 oz)
1 Can Red beans (15.5 oz)
1 Large can Diced tomatoes 28 oz)
1 Large can crushed tomatoes 28 oz)
1 Large can Tomato Puree 28 oz)
1 Container Pomi strained tomatoes (46.8 oz)
2 Tbsp Herbs Du Provence
Salt to taste
½ Cup Jack Daniels
1 Tsp crushed red pepper
1 ½ tsp Chili powder
2 Tbsp Fennel seeds
1 Large chopped onion
1 Medium potato, peeled
If the sausage is links remove and discard the casing.
Brown the sausage and chopit into chunks.
Put the browned sausage into a colander to drain.
Drain and rinse the beans, let drain a bit in a colander.
Put all the tomato things and spices in the sauce pot.
Add the beans, whole potato and the sausage.
Simmer 2 ½ to 3 hours, remove the potato and enjoy the chili.
Put a little shredded cheddar cheese on top and serve with a hunk of crusty berad.
The potato takes the sharp edge off the tomato.
