Lee, this is a recipe I use. I also add some chopped onion. I do sub the pancetta for bacon but either way would be good. I've also done these on the grill with a grill pan.
could have been "pan only" - here's a shot - these are parboiled then sliced in half, then butter fried - first on the flat, then flipped/tossed. depending on how long/hard/hot you take them in the pan, you can get a char on flats&rounds....
