Shrimp & Rice Noodles w/sesame seed-peanut sauce
2 tsp. toasted sesame seeds
1 package dry medium cut rice noodles
2 TBSP. cooking oil
16-20 peeled, cleaned & deveined large raw shrimp
8 oz. fresh asparagus spears, trimmed and cut to 2" pcs.
1 large red, yellow or orange bell pepper, cut to 1" pcs.
8 oz. frozen pea pods
1 tsp. fresh lemon juice
1 tsp. fresh garlic, minced
1/2 cup of bottled peanut sauce
Prep. (clean and cut up) everything before starting to cook. Then:
1.Toast sesame seeds. DO NOT leave unattended! Then
set aside to cool.
2.While toasting seeds, boil 4 cups of water and set dry
noodles in a heat-proof bowl.
3.When water boils, pour over noodles and let sit 8-10
minutes while cooking the rest. Try separating alittle
with chopstiks after a couple of minutes setting.
4.Heat oil in a large skillet or wok over med-high heat.
5.Place shrimp & veggies in pan, then add lemon juice and garlic.
Stir frying for 4-6 minutes until shrimp turn
opaque.
6.Turn heat down to medium and add peanut sauce
and sesame seeds and stir to blend. Turn off heat and let sit while
preparing noodles.
7.Drain noodles and divide into 4 serving bowls, twisting to make a kind of nest.
8.Portion shrimp & veggies into each bowl.
9.Serve immediately.
