Apple-Glazed Chicken Breasts W/ Apple Salad

For the Salad;

2 TBL cider vinegar
2 TBL apple jelly
1/3 c. Mayonnaise
1 Granny Smith apple
1 McIntosh or other red apple
1/2 c. lightly packed watercress
(plus additional for plating)

For the Chicken;

4 boneless, skinless chicken breasts (4-6 oz. each)
1 tsp. olive oil
1/2 tsp. salt
1/4 tsp. coarsely ground black pepper
2 TBL apple jelly
1 tsp. prepared mustard (I used stone-ground)
1 tsp. brown sugar

For Dressing;
Mix together the vinegar, jelly and mayo in a small mixing bowl; set aside....

For Salad;
slice apples (do not peel) into thin julienne strips.
Remove and discard stems from watercress leaves and coarsly chop the leaves.
Combine watercress and apples in a bowl and set aside.

For Glaze;
Combine Jelly, Mustard, and brown sugar in a small bowl.


For Chicken;
Flatten the chicken breasts to an even thickness;
Brush with oil and season with salt & pepper.
Heat grill or grill pan over med-high heat...
Grill chicken 4-6 minutes, or until you've got nice grill marks.
Turn chicken over and grill another 4 minutes or until interior of chicken is no longer pink.
Brush chicken liberally with the glaze during the last minute or so of cooking.

To Serve;
Arrange the additional watercress on 4 serving plates.
Pour dressing over the salad and toss gently. top the watercress with the salad, then arrange a breast on each plate atop the salad.
