Oven-Fried Yellow Squash Medallions

Oven-Fried Yellow Squash Medallions

6-8 Slices Yellow Squash Slices, 1/4 inch thick

1/2 c. Flour
2 TBL. Corn Meal
1 tsp. Cajun Seasoning, or to taste
Salt & Pepper to taste
2 Eggs
Cooking Spray (We use Olive Oil Spray)


Place an oven rack in the center of your oven...
Preheat oven to 450.

Place eggs in a shallow bowl or dish. Beat lightly
Mix together the dry ingredients in another bowl/dish

Execute a double-dredge with the sliced Squash
( Flour - Egg - Flour - Egg - Flour )

Lightly spray medallions with the spray on both sides
Arrange on a Crisping Tray

or on a Wire Rack over a Cookie Sheet.

Bake for 20-25 minutes, or until coating is a golden brown
Remove from oven and cover to keep warm till plating.

they do look good - printing that out - there seems more squash available than ways to eat it . . .

we have a volunteer squash in the garden - but looks to be acorn....

Well, I'd say I'm more than halfway there with success on this dish.

My coating was tough and chewy, and came away from the squash with the first bite.

I'm not a fan of cornmeal, so don't cook with it often. I would try this again with just flour, I think. Does cornmeal get stale???

Also, I forgot to spray the medallions with Pam before putting them on the rack (I did spray the rack), so the bottoms stuck.

On the plus side:

I loved the Cajun seasonings on these.

The squash was tender and juicy.

The chicken thighs (that I normally cook at 350) that I cooked along with the squash were Fantastic!. I'm going to have to edit my favorite "Mom's Chicken" recipe!

Will try this again!
