1 c buttermilk pancake mix
1 egg
2/3 c milk
2 T brown sugar

3 bananas


Oil
Confectioners sugar

Blend first 4 ingredients well.
Slice bananas into 1" pieces.
Dip into the pancake batter and fry in oil til golden brown.

Drain on paper towels and sprinkle with sugar.

Yes Cara, it is :)

Btw Joe, if you make them, they're good drizzled with some warmed blackberry preserves.
I'd also think dipping them in chocolate would be an idea.

Funny you should mention those two choices since I just some locally blackberry preserves and have a whole jar of Hershey's chocolate fondue sauce which I bought on an impulse. :)
