Crustless Spinach and Onion Quiche

I did cut it in quarters, though, for four servings instead of 6.

Crustless Spinach and Onion Quiche
Number of Servings: 6 (4 Smart Points per serving)


Ingredients
1 medium onion, diced
6 ounces Fresh Express Baby Spinach
2 large eggs
1/2 cup egg beaters (liquid substitute)
1/2 cup all purpose flour
1/2 tsp baking powder
pinch cayenne pepper
1 1/3 cups non fat milk
1/2 cup reduced fat shredded cheese


Directions
Preheat oven to 400F.
Lightly grease a 10-inch quiche/tart pan (or a pie plate)
In a medium frying pan, cook diced onion with a bit of vegetable oil (or cooking spray) over medium-high heat until translucent and tender. Add in fresh spinach and cook until just wilted. Set aside to cool for a few minutes
In a large mixing bowl, whisk together eggs, flour, and baking powder. Whisk in milk, then stir in spinach-onion mixture.
Pour quiche base into prepared pan. Top with shredded cheese.
Bake for 25 minutes, or until center is set and the outside edge is golden brown.
Let set for 5 minutes, then slice and serve.

Heated up a sliver of leftover quiche and a wheat tortilla, and with some guacamole and other toppings, made a delicious and filling supper.

Quiche taco! Fusion cooking!

I've come to the happy conclusion that pretty much anything can be heated up and become the base of a great taco, as long as you have the right toppings!

I would like that quiche. I've never tried eggbeaters, but from what I've just read (if you can believe what you read on the internet :)) they are better for you than whole eggs.

Yes, Cooksie. Eggbeaters are just egg whites with food coloring - lower fat, cholesterol and fewer calories than in yolks.

Perfectly fine in dishes like this one, scrambled eggs, omelettes. I've not used them in baking.

Made this again tonight - it never disappoints!

Served with fresh tomato salad and pumpernickel toast to soak up the juice.

This is my favorite - I make it all the time, even when not particularly dieting - it's that easy and good!

I think I will adapt this for Instant Pot. What cheese do you use?
I posted an IP recipe for Crustless Quiche with bacon, eggs and cheese.
