Chicken Apple Salad

Ingredients:
2 cups cooked & cubed chicken breast
2 medium red apples, cored & chopped
1 (8 oz) can crushed pineapple (packed in juice), well drained
1/2 cup chopped celery
1/3 cup low fat lemon yogurt
1/4 cup non-fat mayonnaise
1/4 teaspoon celery seeds


Directions:
In a medium bowl, combine the chicken, apples, pineapple & celery. In a
small bowl, stir together the yogurt, mayonnaise & celery seeds. Add to
chicken mixture & toss until well coated.


NOTE: This sandwich filling is best served within 2 hours. If it stands
longer, the acid in the pineapple will tend to soften the chicken.
