Black Bean Salsa

2 cans black beans, rinsed and drained
1 can diced tomatoe, rinsed and drained
3-4 chopped pickled serrano peppers (or jalapenos)
2 tablespoons minced cilantro
2 cloves minced garlic cloves
1/4 teaspoon kosher salt
1/2 teaspoon ground cumin
juice from 1/2 lime
couple of grinds of black pepper
1/2 of a white onion, chopped (or smoke onion with oil and black pepper, then chop)
3-4 good shakes of hot sauce
plenty of yellow corn tortilla chips

Mix all ingredients together (except chips).

Put in frdge for at least one hour, stir again, and serve with chips.

Also another option, grill or smoke an ear of corn, cut off the cob, and add to this.

Or my favorite ... after you shread a smoked pig shoulder, add this salsa with the shredded meat to a flour tortilla, fold and enjoy!!!!!
