I went grocery shopping this morning. Lots of dinner choices. Will decide later.

Hub and I had rotisserie chicken for lunch.

We hit the Vagabond.
Owned by the same family who've had it for years.
I got the cod and onion rings.
DIL - chicken quesadilla.
Little 'lainey had fish sticks w/ cottage cheese, son had cod and thin homemade fried chips, coleslaw ...other granddaughter Maddie had chicken strips and applesauce.

The pasta got shot down for dinner.
Ty wants to break in the new grill later.
Spare ribs and smoked sausage.

A copycat recipe I came up with for meatball tacos from Johnny Sanchez's in NOLA. The meatballs are ground beef with a puree of roasted poblano peppers, onions and garlic among other things. The sauce is roasted tomatoes, onion, garlic and Chipotle chiles in Adobe among other things. Pickled red onions, a crumbly Mexican cheese, chopped cilantro, and Chipotle mayo are the other condiments.

Boneless thin shell steak, Knorr rice and pasta side, steamed cauliflower and sautéed mushrooms and onions (butter, onion mushrooms, Maggi seasoning sauce, spices, pan fond and steak drippings ).

Tonight is grilled salmon or bust... after an afternoon of weed pulling at my son's yesterday, I didn't feel like doing the salmon. We had leftover meatloaf and potatoes which was excellent. The meatloaf with the leftover spices from the African chicken is very good.

Chicken chilaquiles. No pictures because they just aren't pretty, a very rustic, kind of messy dish. Tortillas cut in strips and fried. Chicken seasoned with S, P and cumin, sauteed until done, cooled and shredded. Onions, fresh chiles (poblano or Hatch), garlic, tomatoes, and I added tomatillas tonight because we had some left over from another meal, all chopped and sauteed until done, seasoned the same as the chicken. Chicken stirred in, mixture covered with Mexican melting cheese, covered with crema, sort of a Mexican creme fraiche, covered and warmed until cheese melts. Served with the fried tortilla chips. This was one of my better ones, don't really use the recipe anymore, but I think I'll add tomatillos from now on.

This also can be a vegetarian dish, just leave out the chicken. We actually first started making this from a vegetarian Mexican cookbook.

soup-- there is 1 @ market district that i luv-- a tomato bisque-- so yummy~~ may make a grilled cheese to go w/ that, too-- & a pabst is a must, too-- jus' hafta have that pabst-- how i've broken yet another keyboard-- already- that is beyond me~`

I am achy and no energy. I asked hub to help me put a corned beef in my Instant Pot. I’ll ask DD to help with potatoes and cabbage in an hour or so. Hopefully I’ll feel better later.

my nurse says i've got that flu as, well-- i'm snoozing away & taking centrum-- boullion; yum-- i've got scads of broths & stocks/bases via my pantry-- may well look into that later-- gatorade is sufficing as yet--

Craig made Yucatan-style lasagna over the weekend and he finished cooking it last night. It was made with a dried red chile/tomato sauce, Mexican cheese(s), and ground beef spiced appropriately. It was interesting. He really liked it, I thought it was okay, but I'm not real big on dried chile/tomato sauces.

making jell-o shots & that is gonna be my dinner, as well as items via 'iggle; salad & soup~~ i'll get further items, too-- ricotta, God, i dunno-- if an item looks to be a winner, i'll toss that into my buggy--

so not into soup beyond their salad bar-- their tomato bisque is to to swoon over, it's so yummy-- their other soup aisle has lost its oomph, tho-- it's depressing

i'll make a salad, too-- if they provide a dressing cup & lid-- my salad ought be crisp, dammit-- not this wilting heap of sad lettuces & wilting cukes due to me having to pour dressing onto my once-new salad that i so meant to dine on--

getting chix tenders, too, & potato--

nary an inclination as to 1 of these items i'll ingest-- i'm gonna say those jell-o shots~~

Stone crab claws with mustard sauce plus a wilted spinach/arugula salad with a bacon, balsamic, Dijon vinaigrette. For dessert, and unknowingly until later in day, I made a Key Lime meringue pie for Pi Day. I didn't get a pic of a slice last night as it was still too soft and fell apart, maybe tonight.

hear u, lollie-- food is food & that keeps us well-- sausage, btw, sounds so yummy-- we got diner food a few nites ago, & that sausage, eggs & toast were gone 4 once-- they gave me a jelly/jam that i'm none too fond of, tho i insist on actual butter, not margarine-- (despise margarine) & drank milk-- 2%, as they've not got whole milk-- lol-- dear bartender & owner dine there, & we saw them 1 nite-- he said, great job, getting ur milk in-- later, his manager/dear luv says that he luvs milk--
ought text her-- i know she is awake-- she'll text me @ 5, 6 a.m.-- neither of us have normal schedules--

i got set on a turkey burger-- then i saw that it's Friday, so phish-fry 4 me~~ our local rectory ladies make delicious sammiches, slaw, & so forth -- u hafta get there so early, as they sell rather quickly-- i may live in pgh, 'cept our Churgh ppl make sure that we have Lenten dinners, well-made~~
