These were good! Not sure why the name, since they are enchiladas.

All the time/effort was in making the sauce. Next time I'll just use a couple of cans/jars of enchilada sauce.

And I'll serve the leftovers with rice!

Tacoritos (adapted from Taste of Home)

Sauce:

1/4 cup butter
1/4 cup flour
4 cups water
3 T. chili powder
2 teas. garlic salt or Adobo


Filling:

1 - 1 1/2 lbs ground beef
1 lb bulk pork sausage
1 small onion, chopped
1 can refried beans
1 teas oregano (I used Mexican)
salt to taste

3 cups (12 oz) shredded Monterey Jack cheese

8 flour tortillas

Optional toppings:

Shredded lettuce
Chopped tomatoes
Sliced black olives
Sour cream



For sauce: melt butter, whisk in flour and cook for a minute. Gradually whisk in water, and bring to boil. Cook and stir until thickened. Add in chili powder and Adobo. Reduce heat and simmer, uncovered, for 20 minutes.

Filling: Brown beef and pork together, along with chopped onions. Add in refried beans, oregano, and salt.

In a Pam'd 13 x 9 casserole dish, pour 1/4 cup of sauce on the bottom of dish. On each tortilla, spread a T of sauce, 2/3 cup of filling, and top with 1/4 cup of cheese. Roll up and place seam side down in dish. Pour remainder of sauce over all and top with remaining cheese.

Bake in a 350 oven for 25 minutes until bubbly and cheese is melted.

Serve with toppings and rice.
