Bacon Cheeseburger Soup

1 pound lean ground beef
1 pound bacon, cooked crisp and crumbled
1 medium onion, chopped
1 carrot, chopped
2 stalks celery, chopped finely
Salt and pepper to taste
1 tsp. dried basil
2 Tbsp. parsley
4 cups chicken broth
4 cups potatoes, diced
4 tablespoons butter
1/4 cup flour
1 1/2 cup milk
1 pound of Velveeta Cheese, cubed
1/2 cup sour cream

Brown the ground beef over medium high heat. Add the onion, carrot and celery. Saute on medium low heat until onions are soft. Stir in the basil, parsley, salt and pepper. Add the chicken broth and potatoes. Bring to a boil, reduce heat and simmer.

In a medium saucepan, melt the butter. Whisk in the flour and cook for a couple of minutes to cook out the flour taste. Slowly whisk in the milk. Cook, stirring constantly until mixture is hot and bubbly. Remove from heat, stir in the shredded cheese until melted.

Remove the soup mixture from the eat and add about a cup of the soup mixture to the cheese sauce to thin it out a little before adding it all back to the soup pot.

Stir in the sour cream.

Once you put the soup into individual bowl, top with some of the crumbled bacon.

Okay, made this for dinner. I did make a few changes.
Here's what I did different:
1) Increased ground beef to 1 pound from 1/2 pound
2) 2 stalks of celery instead of one just because DH loves celery
3) 2 Tablespoons of parsley instead of 2 tsp. because I love parsley with potatoes.
4) 1 pound of Velveeta cheese, cubed instead of the 2 cups of cheddar

It was wonderful!

Mmmm, I'll bet it would be good with Velveeta! I was tempted to use a Mexican four-blend shredded cheese because it always melts up so nice but decided for the first time to stick with the cheddar.

I made a few changes, too.
I increased the ground beef to 1 lb.
I added 3 chicken bouillion cubes to the soup instead of adding salt to taste. It was not one bit salty and the bouillion boosted the flavor of the broth a bit.
I browned the ground beef and veggies together in 2 tsp. of bacon grease because I was not going to use real bacon for the garnish. Instead, I used Hormel Real Bacon Bits to save a few calories.
Because I hate messing up two pots, (HA!) I put the 1/4 c. flour in with the browned gr. beef and veggies, omitting the 4 tblsp. butter altogether, then added the milk, let it thicken, then added the shredded cheddar cheese. Then I added the chicken broth and proceeded with the recipe. If I can do it with one pot, that's the way I go!

It looks like another winner! I'll have to give this one a whirl and I'll be using Velveeta. I love the way it melts.

I think I will make this later this week. It looks awesome. I have 1 question: why do you use chicken stock/broth instead of beef?

Ya know, I've never thought about it but I guess because it's kinda like a spin on a potato type soup and I always use chicken broth in potato soup. I don't know what it would taste like using beef broth. If you decide to try it, I'd be interested in how it turns out.

I needed to do something with my half pound of bacon, so I did a search and this came up!

Used some of my home-grown celery, basil and parsley, and I shredded a block of marbled cheddar cheese that I picked up on sale.

I would call this a STEW ... it is excellent!
