Default Fork & Knife Mediterranean Sandwich

I had this delicious sandwich at the Covered Bridge Farm Table restaurant in Camptn, NH - LOVED it!

Easy enough to duplicate, and I will.

Toast a thick slice of good bread (they used Tuscan).

Layer of hummus, baby spinach, thinly sliced cukes, fried green tomatoes, roasted red peppers, balsamic reduction, feta cheese, olive medley.

Got a side order of very hearty, not very salty, hand-cut potato chips.

We shared the chips, only ate half, and with the sandwich, I was full.

Hmmm, well I recreated this sandwich that I loved in the restaurant.

It was okay, but the restaurant's was way better!
