ZIPPY MEATLOAF

3 Tbsp. olive oil
1 large sweet onion, chopped
1 rib celery, chopped
1 small red bell pepper, chopped
3 cloves garlic, minced
1/4 tsp. sea salt
3/8 tsp. cayenne pepper
1/8 tsp. white pepper
1/8 tsp. fresh-ground black pepper
1/2 tsp. cumin
1 Tbsp. Worcestershire sauce
1/2 tsp. Tabasco sauce
1/4 cup milk
1/4 cup ketchup
2 eggs, beaten
1/2 cup soft bread crumbs
1 1/2 lb. lean ground beef


Preheat oven to 375.
Heat olive oil in a 10-12" cast iron skillet. Add next four ingredients to the heated oil. Saute', stirring constantly until vegetables are tender, about 5 minutes. Add next seven ingredients and blend well. Remove from heat and allow mixture to cool down.
Mix in the next four ingredients and mix well.
Add the meat and combine gently. Place mixture into a greased, 9"x5" loaf pan, patting gently.
Bake, uncovered, until the loaf pulls away from the sides of pan, about an hour. (Interior temperature should be 160 degrees)
Drain fat from the loaf pan.
Let stand, covered, for 10 minutes before slicing.
