Grilled Cheesy Buffalo Chicken

I made this as written, except I cooked it on my friend's gas grill (it was 70 degrees in Boston today!)

Served with grilled asparagus and summer squash, and made some extra sauce for dipping.

The chicken breasts were so big that we each ate half!

Grilled Cheesy Buffalo Chicken

2 boneless, skinless chicken breasts
black pepper
Shredded mozzarella cheese ( I used fat-free)
2 T. butter, melted
1/4 cup Frank's hot sauce
1/4 teas. celery salt

Preheat greased grill pan or outdoor grill.

Cut a pocket in the thickest part of the chicken breast. Sprinkle black pepper inside the pocket and the surfaces of the breasts.

Stuff the pocket with shredded mozzarella, and fold the meat over the cheese.

In a small bowl, combine the melted butter, Frank's hot sauce, and celery salt. Brush one side of chicken with sauce and place sauce-side down on the grill. Brush more sauce on the top of the chicken. Cook for about 7 minutes, then flip and brush the remaining sauce. Cook another 7 minutes or until the internal temperature is 150. Let rest.

Serve with extra sauce for dipping.
