Shortcut Manicotti

I like manicotti, but find it time consuming filling the readymade shells. An easy shortcut...

Boil lasagna noodles, drain, & cut them in half horizontally.

Place filling of choice down the center of the noodle & roll up. Place seam side down in baking dish. Follow your favorite manicotti recipe.

(Tonight I'll be using leftover spinach souffle, ricotta, chopped onions, & Vodka Tomato sauce. Wanted to incorporate toasted pine nuts, but only have walnuts. Use any filling(s) you like.)
