Homemade Ranch Beans...
4 thick slices bacon, cut into small pieces
3 garlic cloves, chopped
15 ounce can diced tomatoes (I use my home canned and cook down a bit.)
2 15 ounce cans pinto beans
1 or 2 canned jalapeños, optional
1 T. cumin - to taste
1 or 2 T chili powder - to taste
salt
In a large dutch oven or saucepan, cook bacon over medium heat, until crisp, or about 5 minutes. Drain off out of the grease, then sauce garlic for a minute, addd tomatoes and juice, and spices, then cook for 4 or 5 minutes. Add beans with their liquid and simmer on low for 15 or 20 minutes. Add seeded and chopped jalapeños at the end before serving, if desired. I usually gently cook the beans down if to much fluid, which usually occurs.
